Going Green and Red Snapper

Baked/broiled Red Snapper over brown rice, sautéed spinach, and steamed broccoli Doing a bit of a natural cleanse. You know the kind with real food and is easy on the palate?  🙂. Plenty of green veggies and even spinach which I’ve really not liked steamed. But oh well, trying to get it right. 

So only fish this week after a weekend of fast food. Ugh. 

Red Snapper baked with sweet onions, red peppers, brown mushrooms, lime and garlic. Then broiled to lightly crisp the edges. Brown rice with turmeric, butter (just a teeny bit) and green onions. Steamed broccoli in chicken broth and steamed spinach.

Pan Fried Salmon and the fixings 

A lot of times I have no idea what I want to eat. I come home from work with a taste for a particular texture or taste and just grab what I have in the fridge that will be different and fresh and new and compliment the main flavor. The salmon is cooked in coconut oil with basil and salt and pepper. I love basil 🌿, fresh or dried. Trying to stay away from breading I just sear the skin side and cover so that it doesn’t dry out. I like carrots so I steamed in chicken broth until soft and then sautéed with sweet yellow onions, celery and garlic. Add crushed pepper 🌶. So I love the pasta nests and added andouille sausage, green onions to the mix.  #lovetocook

Early morning treat 

This is what happens when you’ve been up for hours and can’t get back to sleep. Create a new treat!  One fresh blueberry tart simply made with Grands biscuit, fresh blueberries, brown sugar, cinnamon and a pinch of salt. Then the main-scrambled egg in a biscuit cup, basil, salt and chili powder, topped with smoked Gouda, green onions and some with a pickled jalapeño slice.  It was very good. I think I’ll take them for lunch. Lol. 

I’m staying away from ☕️ mostly but the hot chocolate was a good, sweet and warm compliment. H-E-B brands are my friend. 😉🙂
